Capped comb tells the first part of the story
Frames that are mostly capped usually indicate the bees have reduced moisture enough for storage. That is often the clearest field signal that the honey is nearing harvest readiness.
Pulling too early can leave you with honey that is harder to handle and more likely to ferment, especially in humid conditions.
